December 11 Pineapple Coconut CakeThis has to be one of the easiest cake recipes I've come across. It really yummy served warm with vanilla icecream, or cool with whipped cream and fresh pineapple.
2 cups plain flour
2 tsp baking powder
1 cup castor sugar
1 cup desiccated coconut
3 eggs
1 450g can crushed pineapple
150g butter - melted
Prepare round cake tin.
Combine flour, baking powder, sugar and coconut.
Add eggs, crushed pineapple (including juice), and butter.
Mix to combine, pour into cake tin.
Bake 180 degrees celcius for approx 1 hour. June 25 Apricot and Ginger BiscuitsThese are really easy the kids love them and you can adapt the ingredients to suit.
Ingredients
125g (4oz) butter
1 cup sugar
1 egg
1 1/2 cup plain flour
1 teaspoon baking powder
1 cup approx chopped up dried apricots
1 teaspoon powdered ginger
Cream butter and sugar, add egg and beat well. Sift in flour, baking popwder and ginger. Mix with wet ingredients. Add chopped apricots. Roll into balls and flatten. Bake at 180 C (350 F) for approx 15 mins.
Variations
Use roughly chopped white chocolate and omit the ginger.
Use choc chips for easy choc chip biscuits.
Try finely chopped crystallies ginger instead of powdered ginger.
Use mini M&Ms for a fun treat.
